Beef hides in the fat and the broth, not just the menu.
Mala and hotpot bases are usually cooked in beef tallow; Lanzhou noodle soup is beef-bone,
and 清真 (halal) means no pork, not no beef. Say
不要牛油，不要牛骨汤 — bú yào niúyóu, bú yào niúgǔ tāng.
Careful: 牛油 is beef tallow at a hotpot shop but butter in a Cantonese café,
while 牛油果 is just avocado.

What to eat
Every dish nine research tracks turned up, with the fat and broth it is
normally built on and the words that make it safe. Red cards are the avoid list —
pork- or beef-based, kept here so you recognise them on a menu rather than order them.
Spice and tang scores are estimates, not measurements.

Food streets & night markets
Guangzhou's own food is mild, so the spicy and sour cooking comes from
migrants — Yunnan, Guizhou, Guangxi, Hunan, Xinjiang. These are the streets where it
clusters. Evening is the only time that matters; most of this is asleep at lunch.
Skip these. 永泰, 同和, 小港, 江南西 and 鱼珠 night markets appear on
2026 listicles, but they are Cantonese-leaning and one source had visible errors
(it put 江南西 in Panyu). The 鬼市 "ghost market" is Cantonese seafood.
Shisha
The scene runs along Metro Line 5, and its centre is one plaza:
猎德大道28–36号「珠江道」, five minutes from Liede Exit C, where
TAKE2, LUCCA and COMMUNE sit three doors apart — walk it and compare. Market rate is
¥168 a pipe (about ₹2,000), with a bowl refill around ¥100 on top; the cheapest dated
price is ¥98 at LUCCA. Anything above ¥500 is the private-club tier — walk out.
From the Canton Fair, HUQQA is one stop on Line 11. Nothing with shisha is
confirmed at Pazhou itself.

Before you go
It is a grey zone, not banned
- Guangzhou's smoking ordinance (last amended 2019–20) puts bars and larger
restaurants in a weaker class that may keep a smoking area (Art. 6), and names only
cigarettes, cigars and pipes — not waterpipes (Art. 11). The smoker's fine is
¥50, and only 0.65% of recorded violations in H1 2024 were fined.
- No reports of lounges being raided in 2024–26; enforcement targets illegal vapes.
- A May 2026 draft would ban all indoor smoking, but it is only bidding for a
legislative slot, so the old rules almost certainly still apply during your trip.
Do not carry shisha tobacco in
- Selling it requires a tobacco licence.
- Customs seized 218 kg from one traveller in Dec 2024. Buy it there.
In the lounge
- Order 黄料 (mild) — the strength scale is
红 / 黄 / 黑料, and 黑 is for people who smoke daily.
- Minimum spend (低消) has been illegal since 2014; it
survives as a room charge of about ¥200. Sit in the main room
(大厅) and it does not apply.
- Pay in chunks of ¥200 or less — 分开付 — so the 3% card
wallet fee never triggers.
- Ask for a disposable mouthpiece — 一次性烟嘴.
- Never accept a "special" mix in the bowl. A raid can mean on-the-spot drug
tests and hours in custody.
- Lounges close 02:00–04:00 but the last trains leave 23:02–00:09. The rule:
still in the lounge at 22:30 means you are taking a DiDi home (about ¥14 Liede
to Tianhe on the night meter). Worst traps: 琶洲 / 新港东 westbound 23:02,
海珠广场 L6 23:08, 陈家祠 L1 eastbound 23:06.
- Pick the venue yourself; watch your drink.
- One hour of hookah is roughly 90,000 ml of smoke — 100–200× a cigarette (US CDC).

Vegetarian; no beef, no pork. Egg, chicken and lamb are fine.

Money
- Install Alipay and WeChat Pay in India — both are banned from Indian app
stores, so you cannot easily install them after you land.
- Bind a Visa or Mastercard credit card. No 2025–26 source shows RuPay
working, and UPI does not work in China — the Alipay+/UPI link stalled 9 Sep 2026.
- Switch on international use in your bank app. Since 2020 RBI rules issue Indian
cards domestic-only by default.
- Keep each payment at or under ¥200. At or below that there is no wallet
fee; above it the wallet takes 3% of the whole amount.
- Carry ¥1,500–2,000 in small notes. A foreign card can fail on a stall's personal
QR code, and since 1 Feb 2026 refusing cash is illegal.
Apps that work there
- Amap (高德) has had an English interface since Jan 2025. Google Maps is
offset 50–500 m in China and its listings are thin.
- Dianping (大众点评) added English in 2025. Reports disagree on whether a
+91 number can register — use "log in with WeChat", or its WeChat mini-program.
- Xiaohongshu for photos of what a place actually serves today.
- DiDi works in English and inside Alipay. Always give destinations as
Chinese text — that is what the copy buttons on every card are for.
- Table QR ordering: use the in-app translate, or ask for a paper menu —

Stomach
- Tap water is not drinkable (US CDC, Aug 2026).
- First few days: skip ice at small stalls, cold dishes (凉菜)
and pre-cut fruit. Eat where there is a queue — turnover is the real hygiene test.
- Pharmacy: 蒙脱石散 (smectite) for diarrhoea. Buy
藿香正气 as capsules — the liquid is 40–50% alcohol.
- Guangzhou United Family Hospital, 31 Pazhou Ave — next to the fair complex.

Heat, calibrated
- Sichuan 麻 is a tingling numbness, not heat. Ask for
多放辣椒，少放花椒 — more chilli, less numbing pepper.
- Hunan is the closest to Indian heat — fresh chillies, not numbing. Order
特辣 there and mean it.
- Levels: 不辣 / 微辣 / 中辣 / 特辣 / 变态辣.
Timing
- Golden Week 2026 is 1–7 Oct, so your trip misses the worst crowds.
- Canton Fair 140th: Phase 1 15–19 Oct, Phase 2 23–27 Oct,
Phase 3 31 Oct – 4 Nov (toys and stationery, your phase).
- Inside the halls, eat before 11:30 or after 13:30.
- Xiaobei is packed during fair week — go before 19:00 or after 21:30.
- November: 17–25 °C, about 65% humidity. Late-night food runs 21:00–02:00.
Customs
- No meat, eggs, fresh dairy, fresh produce or loose seeds.
- Sealed namkeen, ground spices and jarred vegetable achar are generally fine.
- Skip ghee and milk sweets.
- Carry your actual passport, not a copy — police can ask foreigners for it, and
Xiaobei has a history of immigration checks.
What this is built on
Six research tracks, 30 Sep 2026, roughly 300 sources. Only places with 2025–26
evidence of trading are in the main list — that filter is on by default. Turn it off
to see leads that need a phone call first.
Known weak spots, so you can judge the rest. The web-search budget ran out
mid-research and Dianping, Xiaohongshu, Amap, OpenRice and Michelin all block automated
access, so there are few star ratings, several entries lack house numbers and hours, and
every spice and tang score is an estimate, not a measurement. No Hunan, Sichuan or
Shaanxi venue got verified — and Hunan is the cuisine closest to Indian heat.
